What is the purpose of most "aerial imaging"?  What is it used for and how is it done?

Lots of things.  Forestry management, agriculture, environmental (drainage, water beds) are a few that come to mind.

Online services like Google maps and competitors get their higher resolution “satellite” or aerial images from aircraft, not satellites. Some info on sources here: https://support.google.com/earth/answer/6327779?hl=en (https://support.google.com/earth/answer/6327779?hl=en)

Actually it could be.  One of the things the forestry division does is "count trees".   They do aerial photography to monitor tree growth, or urbanization that depletes trees.

Another thing that is done is photography for watershed survey.

And as mentioned, companies use the photography to enhance satellite imagery.  Municipalities also order aerial shots for development purposes.

I didn't think of that.  I wish they would come over my property and spray Agent Orange.  I'm dealing with a jungle here.
